Chimay Premiere
I could write a book about the history behind this beer and its makers. I have had Chimay Cheese at fancy restaurants and it was really good. This beer intimidated me a little it had a cork and wire seal as you would have on champagne. It was brewed at the historic Scourmont Abbey in Belgium. It is classified as a trappist beer meaning that it has been brewed within the walls of a trappist monestary. It is 7% Trappist Ale that has a dark amber colour. It has a bit of a metallic taste that I tend to expect in a Belgian beer but it is not unpleasent. Overall it has a crisp refreshing taste and does go very well with cheese and crackers. It should be served cold and in a Chalise, I tried it first in a beer stein and then in a chalise and there actually was a difference in the taste. It is an unfiltered ale so it does have a cloudy texture that may turn some people off.
